Située près de la ville de San Cristóbal Verapaz, dans les régions fraîches et pluvieuses de Cobán, au Guatemala, la Finca San Isabel est située sur 300 acres de terres.
Après la récolte, les cerises rouges sont acheminées vers les réservoirs de réception de la ferme par camion ou à pied. Ils sont ensuite dépulpés mécaniquement. Le café est fermenté jusqu’à 48 heures et est couvert la nuit pour maintenir des températures constantes. Après fermentation, le café est lavé puis trempé dans de l’eau propre pendant 24 heures pour éliminer toute trace de mucilage avant d’être séché.
Celui-ci est séché pendant au moins une journée sur les terrasses puis est stocké une nuit dans des caisses en bois avant d’être acheminé vers les serres pour sécher entre 15 et 30 jours, ou jusqu’à ce qu’un minimum de 30 % d’humidité soit atteint.
